In the summer, I always feel like eating salad more regularly which is great for my diet as it’s is a fantastic way of fulfilling our five fruit and vegetables a week quota which studies still show could significantly impact our long term health [1], they are also a good way of increasing the variety of fruit and veg included in your diet which studies have shown can help improve the diversity and health of your gut microbiome and consequently improve many aspects of your health [2].
One way to make your salad more appetizing is to use a good salad dressing, this is a delicious vinaigrette recipe I make up in a jam jar, store in the fridge and use over a week:
1 pinch of salt & pepper
½ tsp Dijon mustard
½ tsp honey
1 tbsp red wine vinegar
3 tbsp extra virgin olive oil
